Chile-Garlic Shrimp with Zucchini Fettuccini
1 T olive oil
2 lbs. 16/20 shrimp (peeled & deveined)
6/ea garlic cloves (sliced)
2 t Sambal chile sauce
3 zucchini (cut julienne, lengthwise on a mandolin / seeds discarded)
1/ea heirloom tomato (diced)
Salt & pepper to taste
2 T fresh basil (chopped)
2 T parmesan cheese (shredded)
Sautee shrimp in olive oil for 1-2 minutes. Add garlic, sautee for 1 minute.
Add Sambal, zucchini and tomato. Sautee until zucchini is tender.
Season with salt and pepper. Finish with chopped basil and parmesan.
